Hi Chef,
How are you?
I know it has been a while since we have been in the Cerebral Pantry. I thought we better pay a visit.
But first I want to tell you how proud I am of the fact that I have managed to finish my first solo five hundred piece jigsaw. Nicki brought it for me to complete all on my own. I really enjoyed it. I did need a tiny bit of support to see where a section went that I had finished. But I would say I accomplished 95% of it solo.
It was called GARDENER’S DELIGHT and the pieces were really big. It was super satisfying and super bright! I adore a puzzle where all the bits either go or they don’t, its really helpful.

I have also joined the Royal Voluntary Service to help the Home Library Service. I can’t wait to be a Book Chooser for people who need support. It will be a pleasure. I need to work through my online training, than I will be ready to turn to next chapter. I am hoping it opens more doors. It also gives me a chance to continue my volunteering in Dorchester Library with a new hat on, alongside all my other hats.

Hatty’s taste notes: Please give these a try. They are so soft and lush inside. I think these jacket spuds are genius way to rethink the humble pizza. I know a pizza is an amazing thing but involving a sweet spud just elevates it to a new level. I can’t wait to share these with you. So let’s roll our chef’s whites sleeves up and say, “Yes Chef!”

Total Time: 85 mins (1 hr 25 mins)
Ingredients
2 medium sweet potatoes

2 tsp olive oil

2 tbsp tomato paste

100g cheddar cheese, grated

½ red onion, thinly sliced

1 red bell pepper, thinly sliced

200g black olives, pitted & sliced

50g salami

2 tsp chili flakes

Hatty’s taste notes – We didn’t add the last three ingredients. I think when I make these beauties again I will absolutely add the salami and the olives. They will make the flavors pop even more.
Method
Preheat oven to 200oC/400oF/gas 6 and line a baking tray with baking paper. brush sweet potatoes with oil, wrap with aluminum foil and cook for 50-60 minutes.
Once potatoes are cooked, remove from the oven, unwrap and cut in half lengthways.
Top with cheese, onion, red bell pepper, olives, salami and chili flakes.
Place back in the oven and cook for 15 minutes or until the cheese has melted and salami is crispy.
