How are you?
I am good thank you for asking; relaxing into my new life.
You know you are an adult when you start to budget for your meals and planning them. As well as that, I’ve been buying plants and trying not to let them die! Yesterday I came back to see my parents and Mum took me to Holme for Gardens garden centre. I picked out three beautiful plants.

I didn’t buy any roses, however these are still gorgeous.
They are all beautiful colours. I can’t wait to watch them grow on my patio. I also can’t wait to sit at my bistro set table with my cup of tea and a cookie in hand, catching the sunrays. I love set it was a birthday gift from Mum and Dad. Thanks guys.

This recipe comes from Jane’s Patisserie. It’s a yummy one and suits a brew.
Recipe: Triple Chocolate Chip Crinkle Cookies

Cooking time: 12 minutes
Makes: 16 cookies
Ingredients
125g unsalted butter

100g light brown sugar

100g white granulated sugar

1 medium egg

1 tsp vanilla extract

25g cocoa powder

225g plain flour

½ tsp salt

½ tsp bicarbonate soda

½ tsp baking powder

100g white chocolate chips

100g milk chocolate chips

100g dark chocolate chips

Hatty’s Taste note – If you double this recipe = double the goo + double the yum!
Instructions
Step 1
Preheat your oven to 180C/160C and line two baking trays with parchment paper. The trays need to be quite large to make sure the cookies can’t touch (40cm is what Jane suggests).
Step 2
Mix together the butter and both sugars until light and fluffy and thoroughly combined! Using an electric mixer is far easier for this because it gets very fluffy and perfect!
Step 3
Mix in the vanilla and the egg until thoroughly combined, then mix in the cocoa powder, flour, bicarbonate of soda, baking powder and salt until a thick paste/cookie dough is formed.
Step 4
Fold in the chocolate chips and spoon the mixture onto the trays and make sure they are spread out so they stay separate! Jane says she can usually fit 6-8 on each tray. She also uses a 5cm cookie dropper/ice cream scoop to make sure the cookie sizes are identical.
Step 5
Bake in the oven for 10-12 minutes until spread out perfectly crinkly. A minute or less will be gooey, a minute or two more will be beautiful and crunchy.
Step 6 (I promise this is an instruction!)
Once baked, remove from the oven and gobble them all up – don’t burn yourself on the chocolate!
