Hi guys,
I have a question for you. Do you have sweet tooth? You do? Great! Then you will love today’s recipe.
I made these lovely pillowy cookies with the wonderful Bethan last weekend. We watched the Wonka film afterwards so we had a sweet time!

We made two types of cookie and a cake! We were busy. I think we could open a bakery with the amount of lovely things we made! Now can you see why I asked about your sweet tooth?
Today we will only focus on our first set of cookies. So, roll your sleeves up and let’s get ready to make the cookie crumble.

Hatty’s Thoughts
I loved the melt in the mouth texture of these with the little pillows of Kinder. These are dreamy to eat! I love the fact that this recipe evolved from two recipes of Jane’s, her NYC chocolate chip cookies and her Kinder Bueno cookie bars. It creates a great mash up. We doubled the recipe! Recipe
Ingredients
125g unsalted butter

Sugar – caster and light brown

75g caster sugar
100g light brown sugar

1 egg

1 tsp vanilla extract

300g plain flour

Raising agents

1 ½ tsp baking powder

1 ½ tsp bicarbonate soda
300g Kinder bars (chopped)

3 Kinder Bueno (halved to make 12 cookies)

Method
- Beat the butter and sugars together until creamy.
- Add the egg and beat again, then add the vanilla.
- Add in the plain flour, baking powder and the bicarbonate soda, mix together until a cookie dough is formed.
- Add in the kinder pieces and distribute evenly.
- Weigh out the cookie dough into 12 balls (approximately 80g each)
- Once made into balls the dough can go into the freezer for 30 minutes, or the fridge for an hour or so. We did other baking in that time. (Wait until the next time we’re in the Cerebral Pantry to find out more…)
- While the dough is chilling preheat the oven at 160OC Fan
- Take the cookie dough out of the fridge/freezer and place on 2 lined baking trays.
- Bake for 10-12 minutes.
- Once baked, carefully place the kinder bueno into the top of the cookies and leave them to cool for 30 minutes on the trays as they continue to bake as they cool.
- The kinder bueno can melt slightly until the cookies have fully cooled.
- Enjoy!
Hatty’s Notes
We left the Kinder Bueno off the top as it can be a bit too much of a chocolate overload. I suppose ours are just Kinder Cookies. God are they good though!
