It’s been a while, since I saw you in the Reading Corner. How are you doing?
I hope you are enjoying the Summer?
Today we will be taking a look at some Carrot Cake! My lovely PA Georgie made this with me back in April.
Before we see that recipe though, I want to take you back to 28th April 2024. I know that was even prior to our last chat… BUT. I turned 25! It’s backwards from here. I got to spend a lovely day with my family in Honiton and I had an awesome cake and roast dinner. The cake was made by a lovely lady called Holly. I promise I had my lunch the right way round. Savoury first. I call this birthday the birthday of spuds because it was a ‘serve yourself’ carvery. However, they had run out of roast potatoes, so naturally we asked for more. THREE full plates turned up!

The beautiful copy of David Copperfield was a birthday prezzie and I got so many other lovely things, including a National Trust Cake book, a laminator for some of my artwork, a bath bomb, and a GORGEOUS copy of Les Miserables to remember my remarkable Nana by! I can’t wait to review that in her memory. Miss you Nana.

Recipe
Carrot Cake Baked Oats
Song

Equipment
Oven
Oven proof dish
Fork to mash with
Knife
Grater
Blender if you want to blend the oats instead
Skewer to check it comes out cooked!
Ingredients
1 cup oats

1 cup oat flour you can blend the oats if this is easier

2 ripe bananas mashed

1 carrot grated

2 teaspoons cinnamon

1 teaspoon baking powder

1 cup almond milk

½ cup pecans chopped (optional)

Topping
Vanilla yoghurt

Pistachios

Maple syrup (optional)

Method
Preheat oven to 180c.
In a prepared oven proof dish, add in all the ingredients, apart from the toppings, if you prefer sweet, you can add maple syrup.
Mix well and spread evenly.
Bake for 25 minutes or until the skewer comes out clean.
Once cooked add toppings.

I really like the nutty texture. I tried it cold first and wasn’t much of a fan. The next day I had it warm and it was so much better. Go warm guys!
