
Since we last spoke a lot has happened. Before we get to that though, I just want to say that I am working on our next book chat as we speak and it will be coming soon. I think you will enjoy it. To fill in the gap I decided to bring you THREE recipes that work really well together. I hope that wets your appetites for now. I absolutely promise when you see me you will get to see what the Dickens’ is going on.

When we saw each other last I was about to go and see the amazing Paul Weller with my wonderful Mum and my gorgeous Personal Assistant Nicki. I am so glad we went. The week before the show I was due to have my operation and it was postponed. We were all so tired we didn’t want to go but we did. He was amazing. It was at The Lighthouse in Poole in the Concert Hall. He did all the classics. I thought much of his music but I did! We had a really great time. I have rediscovered and fallen in love with Paul Weller.
Paul used to be in a band called The Style Council, as lead vocalist and songwriter. He was guitarist in The Jam before that. When we saw him he did a mixture of his own solo songs and songs from his time with both bands in 1982 and 1977. He is responsible for creating hits like, That’s Entertainment and You Do Something To Me along with many others! I love songs like She and Broken Stones. He has still got the ability to fill you with energy and chill you out at the same time.
I was honestly in awe at how beautiful he sounded! Paul turned my frown upside down.

Recipe 1
7 Minute Protein Brownies

Mixing bowl
Microwave
Ingredients
1 banana

1 egg

1 and ½ teaspoons cocoa powder

½ teaspoon baking powder

1 scoop of vanilla whey protein

Method
1. Mix all the ingredients together until there are no lumps and put in the microwave for approximately two and a half minutes at 800W
Hatty and Georgie’s Tip – Use an Air Fryer instead of a microwave to get a nice crispy texture around the edge!

Chickpea Nutella

Blender
Refrigerator
Ingredients
1 can (1 ½ cup) chickpeas, drained

1 ½ cup vegan milk (Hatty’s tip -why not try cashew milk?)

1 cup vegan chocolate chips

5 medjool dates

1 tablespoon maple syrup

1 teaspoon coconut oil (optional)

1 teaspoon vanilla extract (optional)

¼ teaspoon pink salt (Hatty’s Tip – we used normal salt)

Method
1.Blend everything until you have a very creamy. Taste it for sweetness. Add more milk if the mixture is too thick
2.Place in the refrigerator to set
Hatty’s Thoughts
These two recipes together make real magic. I am amazed by how smooth the Chickpea Nutella goes and how nutty it tastes without proper nuts in it. I really love it. When me and Georgie made the 7 Minute Brownies, we didn’t know about the Chickpea Nutella. I promise you it elevates the new and dizzy heights.

Recipe 3
Homemade Cashew Milk

Ingredients
120g raw cashew nuts

1 litre water

A pinch of sea salt

2 pitted dates (optional)

Method
1. Soak the raw cashew nuts in a covered bowl of water overnight
2. The next day, drain off and discard the soaking liquid. Place the soaked cashews in a high-speed blender, along with the measured fresh water and sea salt, then blend for 1 minute. You can also add a couple of pitted dates to the blender, if you want a touch of sweetness.
3. Store covered in the refrigerator for up to three days.
Hatty’s Thoughts
The combination of cashews and dates gives this milk a nice thickness and nutty sweet texture. It feels like a cooling drinking yogurt. It would be beautiful for a morning pick me up.
