Going Bananas

How are you?
I hope your April is going well.
I haven’t got a book to share today. But I DO have another cool recipe. Firstly though I want to tell you something. I have some sad news and some happy news.
Sad First
I was due to have an operation on my right hip in March. It’s called a Proximal Femoral Resection. Basically at the moment my hip is 70% out of it’s socket. Since June 2023 I have been in a lot of pain. That’s putting it mildly. I have a lovely Consultant and Surgeon called Mr. Wek. He has been doing everything he can to make sure I can stand to transfer still. This means I can help with some of my Personal Care needs. I definitely don’t want to lose this skill.
You see if I had that surgery my right leg would become super floppy. However, I had mentally prepared for the big surgery and then it got changed a few weeks before I was due in. the lovely Mr. Wek changed the plan, and I am glad he has because the first option is irreversible. If he does it in the future it may mean I have a shorter right leg and I will struggle to stand because I will lose muscle in that leg.

So we will see what happens in the next few months. I hope I can tell you about my holidays and that they are will be pain free!

Mr. Wek won’t be shaving the top of my hip yet. He has been speaking to other people in the medical world and has decided to do some investigative surgery, taking some X-Rays and injecting the hip with some Nerve Blocker. All while I’m under General Anesthetic! I do love to have a dream. I am also over the moon because I get to sleep while the X-Rays happen and Mr. Wek will get to see what is actually going on. Up to now all the X-Rays I’ve been through have left me screaming in agony. I can’t wait to be in the Land of Nod. Those of you that remember old blog will remember my Scoliosis Saga from 2014. Here we go again.
If the Nerve Blocker works they will be able to repeat it every year, but in future Mr. Wek may have to do the bigger surgery. But hopefully it won’t be for a long while yet. The first date in March was cancelled and moved to 14th May 2024.
So we will see what happens in the next few months. I hope I can tell you about my holidays and that they are will be pain free!

Today’s recipe is called Cottage Cheese Banana Oatmeal Protein Pancakes.
Today’s recipe was chosen by my lovely friend Bethan, I did give her a few options to choose from!
This recipe comes from Ambitious Kitchen
Cottage Cheese Banana Oatmeal Protein Pancakes
Yum Scale ****

Time it took to make: 15 minutes. 5 minutes to prep 10 to cook.
Difficulty: Easy
Equipment
Blender
Frying pan
Ingredients
½ cup of rolled oats

½ medium banana

½ teaspoon vanilla extract (we used vanilla essence)

1 teaspoon baking powder

½ teaspoon cinnamon

1 egg

¼ cup of low fat cottage cheese

Optional for the top
My PA and I used yogurt and berries but the recipe also says you can add chocolate chips and peanut butter!
Natural yogurt

Chocolate chips

Peanut butter

Mixed berries

Method
Step 1
Place all ingredients in a blender and blend until completely smooth, about 30 seconds
Step 2
Lightly coat a large non-stick frying pan with cooking spray and heat over medium heat. Drop batter by ¼ cup into pan. Add desired toppings, such as chocolate chips or blueberries.
Step 3
Cook until bubbles appear on top. Flip cakes and cook untl golden brown on underside.
Step 4
Wipe the pan clean and repeat with more cooking spray and remaining batter. Makes 3-4 pancakes.

I know this combo may sound odd! Believe me it tastes super refreshing. I was worried it would be really bitty. I was really amazed by how they came out. We burnt ours a bit but it still had a nice texture.
